Getting Ready for Thanksgiving

'Twas the day before Thanksgiving
and all through the house
everyone is preparing for the feast of feasts.
We all have different traditions and foods that we eat.
For me the hardest part of the day is not getting to spend it
with ALL the people we want.

Most people have Pumpkin Pie and many other desserts
on Thanksgiving Day.  My mother-in-law, Pat, always had
Pumpkin, Apple and Lemon Meringue pies but
"THE" dessert that everyone wanted was her Molasses Cookies.
Those cookies became the prized Christmas gifts a month later too.
She would bake batches of them — and those were her treat to me.
She would always hide a couple so I wouldn't miss out.
I never made the cookies with her, but we talked about her
recipe (though she never followed the recipe as written).
After watching the new movie, Almost Christmas, this past weekend
Pat was on my mind (she passed away 1 1/2 years ago).
I dug out the passed down recipe and last night baked my
first batch of Pat's Molasses Cookies.  They aren't as good
as hers were but it did make me feel closer to her.
Pat's Molasses Cookies
Here's a small portion of what I baked.
Yes, there is a lot of flour — the recipe is so soft it's hard to
roll them.  I rolled them thinner than she did so my first batch
turned out crispier — hers were always soft.
I have to frost them yet but I got pretty close.
So I will try again — Pat, here's to YOU!!!
Miss you this Thanksgiving.

Spend time enjoying your family this year.
The shopping can wait one more day.
You can't get the day back once it's gone.
